3/4 cup shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water
1 tsp. vanilla
3 cups uncooked oats
1 cup all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
1 cup raisins
1 cup chopped pecans
Preheat oven to 350F. Beat together shortening and sugars until fluffy, then add egg, water, and vanilla and beat until creamy and smooth. Combine dry ingredients, then add to sugar mixture a little at a time, mixing well. Fold in 1 cup raisins & 1 cup of pecan pieces. Drop by rounded teaspoonfuls onto a parchment paper-lined cooking sheet and bake for 15 minutes.
The last time I made these, I substituted the raisins & pecans for a bag of toffee chips. (Not Heath chips - those did not work so well when I tried them.)
